Many of my friends tell me they are intimidated to bake from scratch. Whether it is the ever-growing blob of bread dough on the counter or the tricky cake recipe that seems like it will fall at any moment, scratch baking just seems overwhelming.
Another important benefit of measuring ingredients by weight is that you will be able to read bread formulas easily and understand if it is properly designed before doing anything. You can’t do this with volume measurements. It just doesn’t work. This is the key to being able to add any ingredient you want to your bread, be it an ancient grain, sunflower seeds, nuts, sugar, oil etc., and knowing it will work. You will be creating great bread and eliminating a significant amount of guess work.
Then pre-measure all your ingredients. You don’t want to incorrectly measure or leave an ingredient out while you are putting everything together. Your goal is to have a great tasting product.

Rye flour is a type of flour historically used in Germany and Eastern Europe. It has a strong flavor and heavy texture as anyone who’s tasted rye bread or pumpernickel will be aware of. If you’re experimenting with your home baking recipes try introducing rye in a small amount.
Another good reason for writing things down is that it will allow you to look at past bakes and learn from them. Say a recipe says to ferment the dough at 76 degrees for 2 hours but the last time you baked that bread you let it ferment for 3 hours at 76 degrees and the bread came out better than ever. If you wrote that information in your notes you will be able to draw from it later to make better bread. If you get in the habit of taking notes and using them you will get better at baking, faster.
The purchasing of industrial baking ovens would also depend on the products you are going to bake. For all the different types of bakes there are different types of ovens. For example, you would need the special ovens for special breads, danishes, croissants, and different types of pastries.
